Pumpkin Pie
1 can of pumpkin (15 oz)
1 can of sweetened condensed milk (14oz)
2 large eggs
1 and 1/2 teaspoons of cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg (plus a little extra because I spilt it in the mix lol)
1/2 teaspoon salt
Pillsbury pie crust (no, I didn't make my own crust)

1. Preheat oven to 425
2. Whisk together the pumpkin, condensed milk and eggs (it is very easy if you throw it all into your Kitchen Aid on level 3, like I did).
3. Stir in the spices - you can add more if you want your pie to taste a certain way.
4. Lay pie crust in the dish and pinch sides to create the crust design.
5. Pour pumpkin mixture into crust.
6. Bake at 425 for 15 min. Then, lower temperature to 350 and bake for another 30 min or until the pie is baked all the way through.
7. Serve with a dollop of cool whip on the top and a glass of milk on the side!

Honey Garlic Shirmp

Today, its time for a recipe! This has actually become one of my favorite dinners because it is so easy and healthy(ish) for you. Some of you that know me will say, "but Megan you hate shrimp" and I will reply with "yes, but I will eat shrimp if its cooked like this any day!"
Backstory: I do in fact hate shrimp. I have always disliked the fishy flavor as well as the texture of it. But, one night the only meat we had in the fridge was shrimp. Even though Daniel knows I'm not a fan, he made honey garlic shrimp and made me try a couple pieces. Now this wasn't the first time I've tried shrimp (growing up my family loved the little crustacean) but this was the first time I bit down into it and loved what I tasted!! The honey glaze made it so it was sweet but the garlic and soy sauce gave it a nice contrast. Since we first made it, we have had it for dinner quite a few times and experimented with the original recipe. So without further adieu, here is our best version of the delicious shrimp dinner:
Ingredients:
1/3 cup honey1/4 cup soy sauce
1 tablespoon garlic
1 teaspoon ginger
1lb of frozed cooked shrimp (I prefer the Costco bag with the tail off)
Green onion
Directions:
1. Whisk together the honey, soy sauce, garlic and ginger.2. Pour the mixture into a large ziplock bag. Drain the fully de-thawed shrimp (de-thawing takes about a day in the fridge) and put it into the bag with the mixture.
3. Let it sit in the fridge anywhere from 15 min to 8 hours.
4. Warm a little olive oil in the bottom of a pan. Pour in the shrimp and the mixture that you put into a bag in step 2. Cook the shrimp on both sides until they are cooked through and the mixture looks more like a glaze (about 2 min).
5. Serve with cous cous, rice or quinoa. For a finished look and better taste, add some chopped green onion to the top of the bowl!

Amazon Fresh Review

Last week was a super busy week at work and I ended up working double my normal hours (I'm usually a part time employee). While I loved working extra hours, I didn't like the fact that I didn't have time to go grocery shopping! On Friday night, I realized we had no food in the fridge and didn't have time to go to the store on Saturday. So, I pulled up Amazon Fresh on my phone and started adding items to my cart (while laying in bed)!
On Saturday, after work, we finished adding all of our groceries to our cart and set up a delivery date. They had a lot of different time slots for the next day so I selected between 7-10am. Unfortunately my cous cous wasn't going to be available during that time slot so I had to remove it from my cart (but I think they would have just delivered it at a later time if I chose to keep it.) On Sunday morning, around 8am, I heard someone set something outside my door and my husband opened the door to find our groceries sitting on our doorstep a couple minutes later.
At first both my husband and I were unsure about ordering produce and meat because we thought they would just give us whatever they had on hand, instead of picking out quality items. However, when we received our Amazon Fresh order we were thrilled to find that the produce they picked out was of top quality and the pound of meat was better than something we would find at the grocery store! The bananas were a little on the green side but that is just how my husband likes them so it was perfect. We are going to order more fruit with our next order to see if it is of equal quality.
Amazon Fresh is a little bit more expensive than going to the traditional grocery store. It is $14.99 per month on top of your prime membership and some of the produce, meat and dairy is a few dollars more than it would be at Safeway (Vons in California or Pubix in Florida). For example, a 1lb block of cheddar cheese is $7 on Fresh and $5 in our local store. But it wasn't too big of a difference for me to complain.
One complaint I have is that they weren't super careful while packing the food. Our bread got squished and the grapefruits were under some heavy items. Other than that, the food was all in perfect condition and everything from our order was in the bags!
I will definitely be using Amazon Fresh again for my grocery needs. I think it is perfect for the working household who doesn't always have time to go to the store and stock up. Has anyone else tried Amazon Fresh? Let me know your thoughts on it in the comments below!
Blueberry Bliss

Today I wanted to share with you my favorite smoothie recipe! I used to make these every day in college because they were so easy and filling. Its also great because you can take it on the go when you sleep through your alarm and are running late for class or work (I know from personal experience - haha). Since graduating, I have started to make a whole meal for breakfast but I still love my go-to smoothie when I don't have time in the morning.
Blueberry Bliss Smoothie
1 cup of thawed frozen blueberries
1/4 cup of greek yogurt
1 teaspoon of honey
1/2 cup of old fashioned oats
1/2 of milk
Put the ingredients into your blender (I use a Nutribullet) in the order listed above. Blend it for about a min or two (I usually blend it while I put my yogurt and milk back in the fridge). Pour the smoothie into a glass and enjoy!
This smoothie can also be prepared the night before so all you have to do in the morning is blend it up and go. I encourage you to add strawberries, bananas or protein powder to make it how you like!
